Sailfish are the staple food of deep sea fishing in Costa Rica. Costa Rica may be one of the best places in the world to land large sail the Pacific in large quantities and is known for producing some of the biggest. When hooked, sailing fight vigorously and are very acrobatic; tail walk, jump and come back several times to try to dislodge the hook. They are a spectacular sight and a lot of fun to catch.
